What can be more suitable for a lovely Sunday than a good dessert? So today, I thought to share a wonderful waffle recipe with you. I recently bought a waffle machine and I was very excited to give it a try. Over here you can find in most of the stores, waffle machines. Every time when I was in the city center of Rotterdam, I could feel the inviting smell of waffles with various toppings. My favorites are the ones with fruits and lots of chocolate sauce, the more the better.
Every time I visited Belgium, the country of waffles, I had to try them. I tried waffles in Antwerp, Brussels, Liege, Brugge and probably in other Belgian towns. I tried different waffle types, the typical Brussels ones and the ones specific from the Liege area. The difference between them is related to consistency and aspect. My favorite ones are the Brussels waffles. They are fluffy and soft and I can eat them with so many choices of toppings.
But first, let me tell you a bit about this amazing dessert. Belgians are known for their fluffy waffles. The most popular waffle comes from Liege, a city in eastern Belgium and the legend says that it was invented by a chef looking for a new dessert for the Prince of Liege, dating from the eighteenth century. Waffles exist from the Middle Ages, where they were sold as street snacks outside of the Belgian churches. The main ingredients used then were barley and oasts, these cereals being the main subsistence pattern in those times.
As I said before, there are two types of waffles. The Brussels waffle is usually square and it’s being served with all kinds of sweet toppings. It has an airy batter, crispy on the outside, and airy on the inside. In the past, it was served plain, the traditional way, or with sliced strawberries. Nowadays, we can find a lot of variations and toppings that are added to the delicious waffle, whipped cream, powdered sugar, bananas, kiwis, chocolate, etc. The Liege waffle is an oval-shaped one, made with brioche dough. It has a dense consistency, it’s quite sweet and usually doesn’t have toppings. It is perfect by itself. 🙂
Initially, the waffle recipe contained yeast, but nowadays, many times baking powder is used. The fluffy and light qualities made especially the Brussels waffle very popular around the globe. In many countries, the recipe got slightly modified, so it became hard sometimes to find an authentic, delicious recipe.
Being very excited about the new purchase, I had to try it. I searched for recipes and finally, I found a suitable one, very good and simple. The end result prepared by the chef looked amazing, so I said I should definitely give it a try. They are very easy to make and in a maximum of 15 minutes, you can enjoy a tasty dessert. All you need is a waffle iron in order to get the perfect shape.
Step 1 – Mix the flour with the baking powder. Pour the flour through a sieve in order not to have lumps.
Step 2 – Mix the egg yolks, with the melted butter and the milk.
Step 3 – Beat stiff the egg whites with a mixer.
Step 4 – Mix the wet ingredients (from step 2), with the dry ingredients (from step 1).
Step 5 – Add the beaten egg whites in the composition, and mix with a spoon. Fold the egg whites gently in the batter, don’t over mix it.
Step 6 – Spray the waffle iron with cooking spray or use butter. Let it warm up.
– Add a small quantity of the batter on the waffle iron and let it cook for approximately 2 min.
